Salted Caramel Almond Dark Chocolate

For Christmas this year I made some Salted Carmel Almond chocolate as a gift for my family (and myself). I had the idea after watching Ina Garten make chocolate bark on her show. My family loves caramel and almond, and prefer dark chocolate, so I combined all of those things into one amazing dessert!

Ingredients:

3 Bars 60-72% cacao chocolate

1 tablespoon of butter

1 cup roasted almonds

1/2 cup of sugar

Salt

Break up all the chocolate and melt it in the microwave. Or a double boiler if you’re feeling fancy.

Make the caramel. I had a really hard time with this honestly, so I’m not going to write the way I did it here. If you have a caramel recipe you like, use that. If not, do some research to find one you like. Caramel is stressful. But it looks cool while you make it!

Cover the almonds in the caramel and set aside to cool. Also, don’t use a spatula that will melt from the lava hot caramel. Oops.

I chopped up the almonds to be in smaller pieces. Mix about 3/4 of them in with the chocolate and smooth it out on some parchment. I tried to make it about 1/4 of an inch thick.

Sprinkle the remaining almonds on top, and sprinkle some salt. I added kind of a lot of salt but feel free to do what you feel comfortable with. Salt is awesome. Now just let it rest for a few hours till it is solid again and chop it isn’t whatever size pieces you want.

While this tasted AWESOME it was a bit more difficult than I would have hoped. It also didn’t last too long before the chocolate got kind of…weird.
